Cold Red Potato & Green Bean Salad |

The pickled vegetables from Tim & Helen Metzger’s Tillen Farms are grown in the fertile, volcanic soil of the Yakima Valley in Washington State. Ingredients for 4 Servings
* 1 dozen small red potatoes
* Tillen Farms' Dilly Beans
* 1/2 cup wine vinegar
* Extra virgin olive oil, enough to coat
* Salt & pepper to taste
* 1/4 cup diced parsley
Preparation
1. Toss warm, blanched red potatoes with a good wine vinegar.
2. Let cool.
3. Mix Tillen Farm’s Dilly Beans with extra virgin olive oil, salt & pepper, & diced parsley.
Serves 4.
